If you love almonds, you are going to love this cake and if you aren’t the biggest fan of almonds…I think you’ll STILL love this cake. It’s light and rich at the same time, with a browned butter glaze that is scrumptious! Not kidding, I could just eat the batter…it tastes like butter almond ice cream! I don’t think there is such a flavor, is there?? This is what it would taste like, though!
Beat the egg whites well; stiff peaks should form but they should not be dry. Fold in the dry ingredients and browned butter gently. This cake will sink a tiny bit during cooling. You can even make a flower design of almond slices to decorate the top!
Browned Butter Almond Torte with Browned Butter Glaze
- ½ cup all-purpose flour
- 2/3 cup, plus 1/3 cup sugar
- 8 tablespoons butter
- 1 teaspoon vanilla
- 1 cup slivered almonds
- ¾ teaspoon salt
- 6 egg whites
- ¼ teaspoon cream of tarter
- Slice almonds for garnish (optional)
Browned Butter Glaze
- 1 tablespoon butter
- ½ cup powdered sugar
- 2-3 teaspoons milk
Grease and flour the bottom of an 8” or 9” cake pan or line with parchment and spray with Pam Baking Spray. Preheat oven to 375 degrees. Heat butter over medium heat in a small saucepan until its melted and golden brown. Remove butter from heat and cool; stir in vanilla.
In a food processor or blender, process flour, 2/3 cup sugar, salt and slivered almonds until almonds are finely ground. Set aside.
Beat egg whites until foamy; add cream of tartar and beat at high speed until soft peaks form.
Add remaining 1/3 cup of sugar gradually and continue beating at high speed until stiff peaks form but are not dry. Fold in ground almond mixture; fold in browned butter.
Pour batter into cake pan. Don’t be alarmed that the batter comes almost to the top of the pan! There is very little rise. Bake at 375 degrees for 30-35 minutes, until toothpick inserted in center comes out clean.
Cool cake in pan on wire rack for 10 minutes. Remove cake from pan, invert on rack and let cool for an additional 10 minutes.
Prepare glaze: Heat butter over medium heat in small saucepan until melted and golden brown. Remove from heat, cool and strain through a fine strainer into a small bowl. Mix powdered sugar into butter; add enough milk to make a thick glaze consistency. Spread glaze over warm cake and garnish with sliced almonds, if you’d like.
