It’s a virtual birthday bash! Meghan, our good friend at The Tasty Fork, is celebrating her birthday and a group of her blogger friends are helping her celebrate her special day! Well, being Little Miss Celebration, of course I had to bring a yummy treat birthday favor! Our birthday girl loves peanut butter, chocolate and the color blue. I worked all this in with these Triple Peanut Butter and Chocolate Chip cookies, all ready for the guests to “take” home in a cute cookie envelope decorated in blue!
I say, if you’re having a birthday, you need a BIG cookie to celebrate! I changed up this recipe, adapted from Gifts that Taste Good. With a thick layer of peanut butter and mini chocolate chips, sandwiched between two peanut butter cookies AND topped off with a generous sprinkle of roasted peanuts, this is a delicious thank you for guests and a special treat for our birthday girl, Meghan!
This recipe makes about 2 ½ dozen cookies – I made them big, so I just squeezed out 1 ½ dozen. Hey, it’s for a birthday favor, they SHOULD be big!
Triple Peanut Butter & Chocolate Chip Cookies
- 1 ½ cups all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup sugar
- ½ cup brown sugar, firmly packed
- ½ cup Crisco shortening
- ½ cup plus ¼ cup smooth peanut butter
- 2 tablespoons light corn syrup
- 1 tablespoon milk
- ½ teaspoon vanilla extract
- ½ cup chopped roasted peanuts
- ½ cup mini semi-sweet chocolate chips
Sift together the flour, baking soda and salt. In a large mixing bowl, cream the sugars, shortening and ½ cup of peanut butter. Blend in the corn syrup, milk and vanilla. Add the flour mixture to creamed mixture and blend well.
Shape the dough into a roll about 1 ½ inches in diameter. Wrap the dough in plastic wrap and chill at least two hours.
Preheat the oven to 350 degrees. Slice the dough into 1/8 inch thick slices (or however you slice them, really, I don’t measure!) Place half of the slices on ungreased baking sheets and put a small mound of peanut butter in the center of each slice. Press a bunch of mini chocolate chips into the peanut butter – as many as you like! Top with the remaining slices and seal the edges with a fork. Gently press chopped peanuts over the tops of the cookies.
Now, a note – this dough is really crumbly. The top cookies will crack when you press them together. It’s ok! Just press and mold and do what you have to and stick peanuts on top. It all bakes together beautifully!
Bake cookies 12 to 15 minutes or until very lightly browned. Cook on wire racks and store in an airtight container.
For our favor, I used my Cricut and the Tags, Bags, Boxes and More cartridge to make a cookie “envelope.” Put the cookie into a plastic treat bag, slip into the envelope and decorate the front for a cute and delicious take-home party favor! Ours say Make a Wish in sparkly blue, in honor of Meghan’s celebration.
