Happy Sunday! Now that it’s “officially” summer, we’ll be having cookouts, picnics, parties and eating outdoors. Salads are always a big part of our summer meals, parties and entertaining – and this salad is right at the top of our list of favorites! With the addition of tuna, this salad is hearty enough to be a satisfying lunch!
I shared this recipe back in the first few weeks of the blog, but since I had it with another recipe, I don’t think I gave this delicious salad its fair moment in the spotlight! Along with my Deviled Eggs with Bacon, this is the dish that I’m always asked to bring to parties – and it seems no matter how much I make, it gets completely gobbled up!
Tuna Macaroni Salad
- One box (16 oz.) elbow macaroni
- 1 cup diced sweet bread and butter pickle chips
- 1 large onion, finely chopped
- 3 cans tuna, well drained
- 4-5 heaping tablespoons mayonnaise
- 3-4 tablespoons pickle juice (from the bread and butter pickle jar!)
- 1 tablespoon celery seed (add more or less to your liking)
- 1 teaspoon Accent
- ½ teaspoon salt
- ¼ teaspoon pepper
Fill a large stockpot about 2/3 full with water and bring to a boil. When water comes to a boil, add about 1 teaspoon salt and 1 tablespoon olive oil to prevent pasta from sticking. Add elbow macaroni, stirring occasionally, and cook approximately 7 minutes. Remove a few macaroni to a colander to test for doneness. While water is boiling, chop onion, pickles and drain tuna.
When the elbow macaroni is finished cooking, drain into a large colander. Rinse macaroni well with cold water, tossing in the colander to make sure all macaroni is rinsed and cooled; drain well.Transfer macaroni to a large serving bowl.
In a mixing bowl, combine mayonnaise, pickle juice, celery seed, salt, pepper and Accent. Whisk all ingredients together.
Add pickles, onions and tuna to the bowl of macaroni and mix with a large spoon. Pour dressing over macaroni and mix well. Cover and chill at least four hours. Mix macaroni again before serving.
