Hi everyone and happy Sunday! It was wonderful to have a few days away, although as is the case with all of us after a little vacation, I’m working to get organized and ready for the week ahead! I happen to have a pretty big anniversary coming up very soon! When we have special occasions or dinner parties during the summer, it’s nice to have an easy, go-to dish that’s quick, delicious and summer bonus – no oven required! Linguine with shrimp, garlic and Parmigiano-Reggiano cheese is a perfect dish for warm summer nights – and happens to be a favorite of my hubby of ALMOST 30 years!
Linguine with Shrimp, Garlic and Parmigiano
- One lb. of linguine
- 2 cloves of finely chopped garlic
- ½ cup of extra virgin olive oil
- ¼ cup Pinot Grigio or dry white wine
- ¼ cup finely diced onion
- ½ tablespoon fresh lemon juice
- ½ cup butter
- ½ teaspoon salt
- ¼ teaspoon pepper
- 1-2 chicken bouillon cubes, dissolved in ½ cup of hot water
- 1 cup grated Parmigiano-Reggiano cheese
- 1 lb. medium to large shrimp, shelled, tails removed and deveined
- 1-2 tablespoons dried parsley
Fill a large stockpot two-thirds full of water. Bring to a rolling boil and add approximately ½ teaspoon of salt and a drizzle of olive oil. Add linguine. Stir occasionally and cook approximately 9-10 minutes or until “al dente.” Drain linguine in a large colander; do not rinse pasta!
While pasta is cooking, add ½ cup olive oil and butter to a large frying pan or electric skillet. On medium heat, stir until butter has melted. Add chopped garlic and onion; fry briefly. Add wine, lemon juice, dissolved chicken bouillon cubes with water, salt and pepper. Reduce heat to low; add shrimp, turning once and cook approximately 4-5 minutes until shrimp are pink and “curled.” Do not overcook shrimp.
Place linguine in a large, warmed serving bowl. Pour sauce and shrimp over linguine and mix well. Add 1 cup Parmigiano-Reggiano cheese and parsley and mix again. Serve in large pasta bowls, sprinkled with additional cheese and parsley. With a salad, warm, crusty Italian bread and glasses of chilled Pinot Grigio, this makes an easy, quick and delicious dinner for a special occasion or dinner party.
