Smoothies are fun to make! You can really throw almost anything into a blender and make a delicious smoothie. This week, my friend Carrie, from Frugal Foodie Mama, is hosting a Green Smoothie Week. To celebrate, we’re making it easy for you AND a friend to whip up perfect smoothies, with a chance to win not one, but TWO Stainless Steel 12-Piece Rocket Blenders. One to keep and one to share!
My smoothie is not a green smoothie but it DOES have something green in it – basil! I decided to try this flavor combination because last summer, I had basil ice cream at one of my favorite local restaurants. I was a bit skeptical, at first, but it was so refreshing and fabulous!
This smoothie is not sweet at all; with plain Greek yogurt and coconut milk, combined with fresh pineapple, basil and a bit of honey, it is tangy, tart and a bit earthy. I’m going to try this one again and back off a little bit on the basil. A sprinkle of fresh coconut on top gives it a little texture.
Pineapple Coconut Basil Smoothie
Makes 5 ½ cups
- 2 cups plain Greek yogurt
- 1 cup coconut milk (I used So Delicious Dairy Free Organic Coconut Milk)
- 1 whole, fresh pineapple, peeled and cubed (I used fresh pineapple already peeled!)
- 7-8 large leaves of fresh basil, cut into strips
- 2-3 tablespoons of honey
- 2-3 ice cubes
- Grated fresh coconut and a wedge of pineapple, for garnish
Cut fresh pineapple into cubes and basil into strips (chiffonade.)
Combine all ingredients in blender and blend until smooth.
Pour into glasses, top with a sprinkle of fresh coconut and garnish with a thick wedge of fresh pineapple.

This will be new for me, but I plan to try this smoothie. I am trying to eat healthier, and I have lost over 80 pounds in the past year, so I am open to more things to keep me motivated. I also need a new smoothie blender, mine is burnt out from the protein drinks, will not crush ice cubes any longer.
