Getting through the last month until Spring can be a challenge! Do you feel that way? We get a little taste of nice weather, like we did here in Maryland this weekend and bam! Winter is back and it sounds as though March may come in more like a lion than a sweet, Spring lamb. I say, let’s have something cozy, comforting and sweet! Nothing fancy or difficult, simply….satisfying. This Baked Rice Pudding, just like my Mom used to make, is a perfect little treat to chase away the end of the winter blues.
Not a typical creamy pudding, this version has substance, texture and is fragrant with cinnamon. It can be eaten warm or chilled and is great with a splash of milk or cream. Give it a fruit topping, finish it with a dollop of whipped cream or, if you really want to kick it up a notch, add a scoop of ice cream or frozen yogurt. Extra points because it makes the house smell so delicious while it’s baking!
Baked Rice Pudding
- 4 cups of milk, divided (I used 2% milk)
- ½ cup regular white rice
- ¼ cup of butter
- 3 eggs, beaten
- 1/3 cup of sugar
- 1 teaspoon vanilla
- ½ teaspoon salt
Preheat oven to 325 degrees. Bring 2 cups of milk and the rice to a boil in a saucepan. Reduce heat; cover and cook over very low heat until rice is tender, about 15 minutes. Remove pan from heat and stir in butter until it’s melted.
In a separate bowl, combine 3 beaten eggs, 2 cups milk, sugar, salt and vanilla. Gradually stir rice mixture into egg mixture. Pour into a baking dish about 10” x 6” x 2” and bake, uncovered, for 30 minutes. Stir pudding and sprinkle liberally with cinnamon. Continue baking until a knife insert between dish edge and center comes out clean, approximately 20 minutes.
Once the pudding cools a bit, you can enjoy it right away. I like mine with a splash of cream! Wrap well with plastic wrap and refrigerate. The pudding can be rewarmed briefly in the microwave.
