Chicken Salad In A Red Delicious

Chicken Salad in a Red Delicious-a fun lunch for children and adults! At littlemisscelebrationChicken salad. It’s a staple on the lunch menu of just about every deli and restaurant. What’s so special about plain old chicken salad? Want to know a little secret? I have NEVER made chicken salad. I never make chicken salad because I’m totally and completely obsessed with a chicken salad made and sold at a local grocer. Theirs is a family recipe that’s been around for like 100 years and it’s simply the best. After decades of eating it, thinking about it and trying to figure out how I can make it, I finally decided to stop thinking already, and try it! For fun lunch, I’m serving up my Chicken Salad in a Red Delicious apple!

The beauty of the chicken salad that I love so much is in its simplicity. No bells, whistles or extravagant extras here! The chicken salad that inspired mine is creamy and focused on just the chicken, which is shredded and dressed with mayo and finely diced celery. It’s those elusive spices…and the preparation of the chicken. My taste buds tell me it’s not baked, broiled or fried. I decided to simmer the chicken in chicken stock.

After shredding the chicken, dicing the celery and mixing the final product – during which you honestly would have thought I was conjuring up some magical potion, for goodness sake! – I was afraid to taste it and handed a fork to Mr. Smarty Pants. Breath held, “Well,” I asked, “What do you think?”

He took an awfully long time chewing and swallowing. The verdict? Pretty darn close and absolutely delicious. I’ll take it! :) I made this salad with chicken tenders, which I had in the fridge.

Chicken Salad in a Red Delicious

  • Two packages of chicken tenders (about 10 pieces of chicken)
  • 3 ½ cups of homemade or purchased chicken stock
  • 1 cup of finely diced celery (about 3 stalks)
  • ¼ teaspoon of ground white pepper
  • ½ teaspoon of sea salt
  • 5-6 tablespoons of mayonnaise
  • 1 large Red Delicious Apple for each serving

In a large stockpot, bring chicken stock to a boil; reduce heat to simmer and add chicken. Cover and simmer until chicken is thoroughly cooked and tender, about 15 minutes.

Remove chicken from stock, drain and cool. Shred chicken into a bowl, using two forks. Add celery, white pepper, sea salt and mayonnaise. Mix well and chill.

To serve chicken salad in a Red Delicious apple, core apple and thinly slice off top. Make another slice from the top and hollow out center of apple with a spoon. Fill apple with chicken salad. For a little extra flair, attach the apple slice to the whole apple with a toothpick. Serve with crackers.

I’m still going to be getting my favorite chicken salad – and I’ll keep trying to get it just right! For now, though, I’m thrilled that I can make my own version and a fun lunch.

Is there a dish from a local place in your town that you just love? Have you had success in making your own version at home?

Thanks so much for stopping by and I hope you enjoy your day!

  2. You make everything look like so much fun, Cindy!! I bet your kids friends wanted to stay at your house!!

    • :) Thanks, Paula! They did like staying at our house, probably because I was (am!) just as much of a kid as they were! Hope you have a happy Saturday and a wonderful weekend!

  3. Cindy, this look so delicious! Perfect for lunch and I love that you put the chicken salad in an apple, so creative! Pinned :)

    • Hi Jenn! Thank you so much for the pin and your visit! This is a fun and delicious lunch and I think both adults and kids would enjoy it in an apple. :) Hope you have a happy Saturday and a fabulous weekend!

  4. Oh how I LOVE chicken salad, Cindy and this presentation is just so much fun! It looks delicious and I might have to find a chicken salad sandwich somewhere for lunch now. Pinned!

    • Hi Claire! I love chicken salad, too – so I guess when we get together, I know what we’re having for lunch! ;) Thank you so much for the pin and your visit. Happy Saturday!

  5. I agree that chicken salad should be simple and not have too many bells and whistles. I feel the same way about most deli salads. In fact, I might even leave out the celery. Fisherman hates it and I wouldn’t miss it. The chicken broth step is genius, btw, and I’m totally stealing it ;).

    Adorable plating Cindy!

    • Thanks, Doreen! I can handle celery if it’s very fine. The chicken stock added a lot of flavor and made it pretty close to my inspiration version. Let me know if you try it and what you think! Hope all is well and have a happy weekend!

  6. This looks awesome Cindy and what a fun way to serve chicken salad! I have never made my own at home either but yours looks so good I will definitely have to try it – pinning :)

    • Hi Kelly! It took me long enough to figure out how I wanted to make this and it’s easy, so I hope you give it a try! Thank you so much for the pin and your visit. Hope you have a happy weekend and are able to get a little rest! :)

  7. Cindy, I LOVE how you did your chicken from the start. Almost all of my friends will serve up chicken salad …from a can! I am going to have to seriously email all of my gals this recipe of yours. I love the whole presentation and everything about this recipe! Simply gorgeous and simple. ;)

    • Gloria, you are just too funny! I am so picky about my chicken salad and finally made one that comes close to my favorite. The chicken stock added so much flavor and I thought the apple was a fun way to serve it (a little dessert after!) Thank you so much for visiting and hope you have a happy weekend ahead of you! Hugs!

I love the idea of putting the chicken salad in an apple! I enjoy chicken salad for lunch (or dinner) on occasion and I’ll have to remember the chicken stock idea instead of water!! Total duh moment for me!

    • Hi Jamie! The apple is like a built-in dessert! The chicken stock added just the flavor I was looking for, so definitely try it next time. (And I bet the children would get a kick out of the apple!) Thanks for visiting, my friend!

  9. What a fun way to serve chicken salad! When I make a great big bowl of it for our annual family vacation, I use rotisserie chickens (so lazy), but I will have to try your recipe. I know the stock adds so much flavor I’m pinning!

    Have a great weekend, Cindy!

    • Hi Alli – it’s not lazy to use rotisserie chicken when cooking for a crowd, it’s expedient! :) The stock did add a lot of flavor and using chicken tenders, it cooked quickly. Thank you so much for the pin and your visit. Happy Saturday and enjoy your weekend!

  10. I love chicken salad with cut up apples in it…so I am SURE I would love this! Yum! I just need to sub out the mayo for an egg free, soy free version and I am good to go. :)
