When I opened the package with this egg tray from the Flutes & Pearls collection, given to me by Wilton Armetale, I couldn’t wait to come up with a recipe and share my experiences using this beautiful piece. The egg tray was perfect to bake – and serve – Baked Maple Bacon Pancake “Eggs”. A little maple butter, molded into roses, makes this an Easter breakfast or brunch dish that’s delicious and fun! These baked pancake “eggs” are light and fluffy, with a touch of maple sweetness and the perfect crunch of bacon inside! With a little spritz of Pam baking spray, the pancake eggs baked beautifully and slid right out of the egg tray onto a wire rack. I couldn’t believe how well this tray retained heat! Wilton Armetale pieces are oven, stove or grill safe up to 1,000 degrees, so they’ll keep food hot longer, perfect for entertaining! On the flip side, chill it and the metal will keep cold foods nice and chilly.

I made some maple butter to go with our pancake “eggs.” It’s Easter, so for a special touch, I molded the butter in a silicone rose shaped butter mold and placed a butter rose on each egg. Add a little bowl of maple syrup and you’ve got a breakfast or brunch dish the whole family will love! You can make the pancake eggs in advance, reheat them and the tray and serve. Of course, don’t put the butter in the center if the tray is hot. Clean-up was a breeze! Simply wash the egg tray by hand with mild soap and rinse with hot water. These pieces are not dishwasher safe, though wash so easily it took seconds. With a little tender loving, hand wash care, these beautiful pieces should last a lifetime!

Baked Maple Bacon Pancake “Eggs” and Maple Butter
Makes 24 “eggs”

  • 6 slices of maple or regular bacon, fried until crisp
  • 1 cup flour
  • ½ teaspoon baking powder
  • 2/3 cup of buttermilk
  • 1 egg, lightly beaten
  • 3 tablespoons butter, melted
  • 2-3 tablespoons of bacon grease
  • 3 tablespoons of pure maple syrup
  • Pam baking spray

For Maple Butter:

  •  ½ cup butter, softened
  • ¼ teaspoon brown sugar
  • 2 ½ tablespoons pure maple syrup

Preheat oven to 350 degrees. Lightly spray each cavity of egg tray with Pam baking spray. Fry bacon until crisp; crumble bacon into small pieces in a bowl and reserve 2-3 tablespoons of bacon grease. Combine flour, baking powder, buttermilk, melted butter, and egg in a mixing bowl. Add crumbled bacon, bacon grease and maple syrup, stirring until well blended.

Fill each cavity of egg tray with batter; bake at 350 degrees for 15-20 minutes or until lightly browned.

Maple Butter:

Whip together softened butter, brown sugar and maple syrup. Place butter in a small dish or press butter into butter or candy mold to form shaped butter. Chill until firm.
