At littlemisscelebration.com Do you love pasta salads as much as I do?  I love that you can throw just about anything in the bowl but the kitchen sink, and it’s almost guaranteed to be great. The inspiration for this Rotini, Tomato & Feta Salad with White Balsamic Vinaigrette came from a colleague, who brought it to a pot-luck wedding shower last week for another fantastic office friend. His mother-in-law made it and everyone wanted the recipe. The dressing was made with white balsamic. I booked it straight from the office to the grocery store at the end of the day, ready to create my own version.

This didn’t salad didn’t turn out good – it was FANTASTIC! My effervescent daughter, who has a flair for the dramatic, {wow, wonder where she got THAT from?} immediately declared it the best pasta salad ever and her new favorite salad in the whole wide world. Whoa! Mr. Smarty Pants, after reminding me, semi-gently, that he doesn’t like feta, olives or pimento, ate two huge helpings. I’ve been married long enough to just smile. I’m convinced there’s a little bit of magic in that white balsamic!

Can you believe I’ve never used white balsamic before? Through a bit of research, (thanks, bon appétite!) I discovered that white balsamic is made from white Trebbiano grapes; it is cooked differently to prevent the deep caramelization and syrupy consistency of regular balsamic. It’s also aged for a much shorter period of time, about a year, compared to an aging of up to 20 years for regular balsamic. I love regular balsamic, though found the golden color and clean taste of white balsamic intriguing and delicious.

As with all pasta salads, if there’s an ingredient that doesn’t make the cut on your list of likes, just substitute something you like! I used three colors of grape tomatoes for color and a touch of sweetness plus fresh, Italian parsley. I SO hope you like feta cheese, because it takes this salad over the top! The dressing on this salad is a light and refreshing change from mayonnaise-based dressings, while still so satisfying.

Rotini, Tomato & Feta Salad with White Balsamic Vinaigrette

Serves: 8-10
 

A refreshing and delicious pasta salad, combining the sweetness of tri-colored grape tomotoes and feta cheese, finished with a white balsamic vinaigrette & fresh Italian parsley.
Ingredients
  • One lb. of rotini pasta
  • ½ lb. of grape tomatoes (for color, choose red, yellow & orange tomatoes), sliced into thirds
  • One cup of medium, pitted black olives, sliced (6 oz. can)
  • 3 tablespoons of diced pimento
  • 1 ½ – 2 cups of crumbled feta cheese
  • ½ cup white balsamic vinegar
  • 1 cup of extra-virgin olive oil
  • ½ teaspoon of white pepper
  • 1 teaspoon of salt
  • 1 ½ tablespoon McCormick Perfect Pinch Garlic & Herb, Salt-Free
  • 2 tablespoons snipped fresh, Italian parsley

Instructions
  1. Cook rotini according to package directions, about 8 minutes.
  2. Drain pasta; immediately rinse with cold water until pasta is cooled and drain well.
  3. In large bowl, add pasta, slice cherry tomatoes, sliced olives, pimento and feta cheese.
  4. Combine white balsamic, olive oil, white pepper, salt & Perfect Pinch Garlic & Herb in a separate bowl.
  5. Whisk together oils and spices together; pour over pasta.
  6. Add fresh Italian parsley and mix well. Cover and chill about 4 hours.
