My family and I always disagree – strongly! – on frosting. I hate to admit this but I’m not a frosting fan. I LOVE the way it looks, and there are a few I’ll eat, but typically, if you hand me a cupcake or a slice of cake, I’ll scrape off every last bit of frosting and just eat the cake. I know, I know, my family is always horrified, too. :) I like glaće icings, cream cheese or whipped cream based-frostings. These cupcakes are finished with a very light, whipped cream, rich glaće icing. It’s light, not too sweet, and just right for summertime. The very light pink color comes from adding a bit of cherry juice, reserved when you pit the cherries.

These cupcakes are so delicious and I feel so bad that my photos do not do them justice! I almost didn’t even share these today. We’ve had some horrific storms here for the past few days and it’s been practically dark when I’ve gotten home from work. Power has been flickering , thanks to the pretty impressive thunder and lighting, not to mention the torrential rain! I know practically the entire country is having weird, summer weather.

Cherry Cream French Vanilla Cupcakes

Sweet, summer cherries take the spotlight in these light, tender cupcakes!
Ingredients
  • One box Betty Crocker French Vanilla Cupcake Mix
  • 4 eggs
  • ⅓ cup vegetable oil
  • 1 and ¼ cup heavy whipping cream
  • 1 teaspoon pure vanilla extract
  • 3 cups dark, sweet cherries, washed, dried, pitted and cut in half (reserve a 1-2 teaspoons of cherry juice for frosting)
  • Whipped Cream Glaće Icing:
  • 1 cup confectioner’s sugar
  • 1 and ½ teaspoons butter, softened
  • 1 teaspoon vanilla extract
  • 6-8 tablespoons heaving whipping cream
  • 1-2 teaspoons of cherry juice (reserved from pitted cherries or use liquid from maraschino cherries)
Instructions
  1. Preheat oven to 350 degrees and place cupcake liners in two 12-cup cupcake tins.
  2. Combine cake mix, eggs, vegetable oil, whipping cream and vanilla extract in large mixing bowl. Beat on low speed for 30 seconds until ingredients are combined; beat on medium speed two minutes. Batter will be thick and fluffy.
  3. Gently fold cherries into batter.
  4. Fill cupcake tins about ⅔ full.
  5. Bake cupcakes 20-25 minutes; time will vary depending on your oven and if you use shiny or dark cupcake tins. Test cupcakes with a cake tester or tooth pick to ensure cupcakes are fully baked.
  6. Cool cupcakes completely on wire rack before frosting.
  7. Whipped Cream Rich Glaće Icing:
  8. In mixing bowl, combine confectioner’s sugar, softened butter, vanilla extract, cherry juice, and 1-2 tablespoons of whipping cream.
  9. Beat with an electric mixer, continuing to add additional tablespoons of whipping cream until the icing is very light and creamy, almost like thick, spreadable whipped cream.
  10. Frost the cupcakes and top with a fresh cherry.
