Super Bowl Sunday might be front of mind this week, but Cupid is right behind the Broncos and the Panthers, and he’s driving! It’s always good to have a super quick, easy treat up our sleeves, because let’s be honest, we get busy and BAM! Sometimes those holidays just sneak up on us! I’ve been pretty loyal to mixes from my home town Duff because he’s never disappointed me – every mix I’ve tried has been fantastic! These Strawberry Shake Chocolate Chip Cookies are great and so fast to make. You can find the mix at Target.
Follow the directions on the box – it’s just butter, eggs and mix with a spoon! You can make these as pink as you please! I used just half of the coloring packet and wow, they are pink. Roll the dough into balls, place on a parchment-lined cookie sheet and bake. I got two dozen cookies out of the mix.
The strawberry smell is amazing while these are baking! They’re a bit soft when they first come out of the oven, so give them a few minutes to cool on the cookie sheet before moving them to a wire rack to cool.
As soon as I bought this mix, I knew they would make fun, Valentine-worthy, ice cream sandwiches! So as you can see, my ice cream sandwiches are gloriously imperfect, but did my family care? Oh no, they could barely wait to get their hands on one! I used vanilla and strawberry ice cream between two cookies. After I scooped out the ice cream, I placed the scoops in the freezer for a while and it was a bit too frozen to dip in the jimmies and sprinkles. Jimmies for hubby and heart sprinkles for my daughter. They had big smiles on their faces and couldn’t have cared less about the uneven sprinkle placement. 🙂
I have a few more ice cream sandwiches wrapped in plastic, tucked in the freezer and all ready for Valentine’s Day weekend.
