We have a birthday girl and she asked for – a very pumpkin birthday! Julie from This Gal Cooks is celebrating her birthday today and a bunch of her blogger friends are throwing her a virtual bash – and all of the party food is pumpkin! I’m taking the pumpkin for a walk on the cold side with a Frosty Pumpkin Ice Cream Pie! This recipe is adapted from my 1960 BHG Dessert Cook Book. Even though this pie might not be as dazzling as some fancier desserts, don’t let its quiet demeanor fool you. This pie delivers some frosty and fantastic pumpkin flavor!

This ice cream pie could not be any easier to make! The only thing I would do differently next time is to lightly butter the pie plate or spritz with a little Pam Baking Spray to make removing slices easier! Let it sit out a bit before you cut, not attack it with the first knife you can lay your hands on the second it’s frozen, like we did! ?

Frosty Pumpkin Ice Cream Pie

Graham Cracker Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ teaspoon cinnamon
  • ½ cup melted butter

Mix all ingredients together well. Lightly butter a 9-inch pie plate and press crumbs firmly into plate. Chill until set, about 45 minutes. Make filling.

Pumpkin Ice Cream Filling

  • 1 cup canned pumpkin
  • ½ cup brown sugar
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • ½ teaspoon ginger
  • ¼ teaspoon nutmeg
  • 1 quart vanilla ice cream
  • Optional – Almonds, whipped cream and cinnamon sugar, for garnish

Mix pumpkin, brown sugar, salt, cinnamon, ginger and nutmeg together in a large mixing bowl.

Place ice cream in a separate bowl and stir until it has softened. Fold ice cream into the pumpkin mixture. It’s fine if there is some ice cream that doesn’t completely mix with the pumpkin. Spoon the pumpkin ice cream mixture into the graham cracker crust and freeze until firm.

Garnish the pie with almonds, if you’d like, before serving. For each individual serving, sprinkle a dessert plate with some cinnamon sugar, top the ice cream pie slice with whipped cream and finish with a dash of cinnamon.

Our pie did not want to be a plain Jane for Julie’s big day, so I gave it a little dress-up with a fast pumpkin pompom bunting – and a special card for the birthday girl!

Your pie looks so yummy, oh goodness sakes. Will take recipe with me tomorrow for our monthly grocery shopping, (SS payday-finally). Some months it seems it’ll never get here. We’ve had month after month of 5 week months to stretch our abundant funds, lol. Looking at the recipe, not too many extra ingredients to buy. I might just buy a pre-made graham cracker crust. You have some great pumpkin recipes besides this one so will be back to print them out. Glad you shared all these. Happy week
